

The rainy, cold, and dark Irish winter is coming to us once again.
It is the perfect time to enjoy Keva’s warm sweet potato and coconut soup, complimented with a traditional Irish Brown Bread with Keva’s twist of added sea salt, black pepper and lime.

Here is an easy and quick recipe:
Ingredients:
80g Oatmeal
30g Wheat germ
50g Bran Flakes
295g whole wheat flour
220g White flour
6g baking soda (sifted)
6g baking powder (sifted)
1 g sea salt
1/2g nutmeg
3g coarse fresh black pepper
2g fresh thyme leaves
2 limes zest
50g Black Treacle ( molasses)* or Dark brown sugar
2 eggs
70g good quality Olive oil
2 limes juice
550ml buttermilk
Steps:
1 Preheat the oven to 325-350 ºF ( 160-180 ºC )
2 Mix all the dry ingredients together in a large bowl. Including thyme and lime zest.Using fingers tips rub mixture by hands, which infuses the flavors really well.
3 Combine in a small bowl. Eggs, Olive oil, buttermilk,lime juice,and treacle together.
*If using treacle instead of brown sugar. It will take a little longer to combine.
4 Turn into a well- greased cast iron baking pan or a loaf pan and bake for 1 hour and 15 minutes. Turn bread over in pan bake for 5 minutes more.
The results of this bread is amazing! crunchy on the outside and soft and flavorful on the inside.
